Seven-Spice Powder

  1. In dry frying pan over medium-high heat, toast until they smell nice:
    • 2 Tb fennel seeds
    • 10 star anise, broken into individual points
    • 1 Tb coriander seeds
    • 1 Tb black peppercorns
    • 1 tsp whole cloves
  2. Grind them up in a spice or clean coffee mill.
  3. Add:
    • ½ tsp ground cinnamon
    • ¼ tsp ground ginger

I started with the Ten Spice Powder recipe from China Moon, and fiddled it until I got what I wanted.

This mixture can be used in any Chinese-style recipe calling for Five Spice Powder. I frequently mix it with kosher salt and use it as a rub on pork for roasting.
