- In dry frying pan over medium-high heat, toast until they smell nice:
- 2 Tb fennel seeds
- 10 star anise, broken into individual points
- 1 Tb coriander seeds
- 1 Tb black peppercorns
- 1 tsp whole cloves
- Grind them up in a spice or clean coffee mill.
- ½ tsp ground cinnamon
- ¼ tsp ground ginger
I started with the Ten Spice Powder recipe from China Moon, and fiddled it until I got what I wanted.
This mixture can be used in any Chinese-style recipe calling for Five Spice Powder. I frequently mix it with kosher salt and use it as a rub on pork for roasting.
